Archeological excavation in and around Axum, Ethiopia shows that thousands of years ago (sometime between 1000 BC to 1 BC) ancient Ethiopians put three important farming pieces together: the plow, the ability to train oxen, and the knowledge of how to grow different grains, grasses, and other crops. In recent years, teff began to be known around the world as a “superfood,” full of protein, fiber, and calcium—and also gluten free. Ethiopia is experimenting with exporting teff.
